Marsannay rouge

Sylvain Pataille
Picture a Pinot Noir that tastes of the place it comes from. Grown on the northern tip of the Côte de Nuits, these vines sit on limestone-rich clay soils farmed organically, with real care given to old plots and low yields. The grapes are picked by hand, fermented with wild yeasts using a good share of whole bunches, then aged gently in barrel so the fruit keeps centre stage. You get bright red cherry, wild strawberry, a twist of pepper and fine, silky tannins. Lovely now with roast chicken or charcuterie, yet happy to wait a few years in the cellar.
