Le Chapitre

Sylvain Pataille
A single-vineyard Pinot Noir from a historic slope just south of Marsannay, farmed organically by one of Burgundy's most thoughtful growers. Sylvain Pataille works old vines on limestone-rich soils, picking by hand and letting whole bunches and wild yeasts do the talking. Expect a bright, perfumed red: wild strawberry, rose petal and crushed stone, with that silky texture and fine, chalky grip that makes you reach for a second glass. Ageing in seasoned oak keeps the fruit pure and the energy intact. Lovely now with roast poultry or charcuterie, and happy to rest in your cellar for a few more years.
