L'Ancestrale

Sylvain Pataille
From Marsannay, this cuvée comes from Sylvain Pataille, a former oenologist turned biodynamic grower who knows every corner of these clay-limestone slopes. Old Pinot Noir vines, some planted decades ago, give fruit picked by hand and fermented with native yeasts in whole bunches. Ageing in used barrels keeps the focus on purity rather than oak. Expect bright red cherry, wild raspberry and a gentle earthy, floral edge, carried by silky tannins and lively freshness. It drinks beautifully now with roast poultry or charcuterie, yet has the structure to reward a few years in the cellar. Honest, vibrant Burgundy at its most charming.
