Fleur de Pinot

Sylvain Pataille
Crafted in Marsannay by one of the Côte de Nuits' most thoughtful growers, this pale, delicate rosé comes from old Pinot Noir vines farmed biodynamically on the stony, clay-limestone slopes north of Gevrey. A short maceration and gentle pressing give you that signature pastel-salmon colour, before fermentation and ageing on fine lees in tank and old barrels add quiet depth. Expect wild strawberry, redcurrant and white peach, a whisper of rose petal, and a chalky, mouth-watering finish that keeps you coming back. Serve it lightly chilled with charcuterie, grilled fish or simply good company — you'll find it disappears quickly.

Wine name: Fleur de Pinot

Vintage: 2023

Producer: Domaine Sylvain Pataille, Marsannay-la-Côte

Grape varieties: 100% Pinot Noir (including old plantings of Pinot Noir, with occasional traces of Pinot Gris and Pinot Blanc from the historic Marsannay field blends)

Region: Burgundy, Côte de Nuits, France

Appellation: Bourgogne Rosé (AOC)

Vinification method: Hand-harvested whole bunches, gentle direct pressing and short maceration on the skins, natural fermentation with indigenous yeasts, ageing on fine lees in stainless steel tanks and used oak barrels for around 9 to 12 months, minimal sulphur additions, unfined and lightly filtered or unfiltered depending on the cuvée

Maceration: Brief cold skin contact of a few hours before pressing, enough to extract colour and texture without tannic weight

Colour: Pale salmon pink with coppery, onion-skin glints and a bright, clear sheen

Bouquet: Wild strawberry, redcurrant and pink grapefruit, with hints of white peach, rose petal and a subtle saline, chalky edge

Palate: Dry and precise, with crisp red berry fruit, citrus zest and a fine mineral line; silky texture, genuine depth for a rosé and a long, savoury, slightly salty finish

Alcohol content: 12.5% vol

Soils: Limestone and marl from the Marsannay area, with clay and stony scree on gentle slopes

Farming: Certified organic, worked with biodynamic practices, ploughed soils, no synthetic treatments, low yields

Ageing potential: 3 to 6 years from the vintage, with best drinking between 2024 and 2029

Food pairing: Grilled prawns, salmon tartare, charcuterie, roast chicken, goat's cheese, summer vegetable dishes, lightly spiced Asian cuisine

Serving temperature: 10 to 12°C
