Le Chapitre

Sylvain Pataille
Tucked just south of Marsannay, this historic hillside site gives a Pinot Noir with real personality. Sylvain Pataille works his vines organically, with low yields and plenty of patience, letting the limestone-rich soils speak for themselves. Expect bright red cherry, wild strawberry and a touch of peppery spice, carried by silky tannins and a fresh, mineral finish. Whole-bunch fermentation and gentle ageing in older oak keep everything pure and lifted, never heavy. Drink it now with roast poultry, charcuterie or mushroom dishes, or tuck a few bottles away for five years. A beautifully honest Burgundy that punches well above its appellation.
