Blanc Beurot

A rare treat from Marsannay, crafted by one of the Côte de Nuits' most thoughtful growers. Sylvain Pataille works his vines organically, with low yields and a gentle hand that lets the fruit speak for itself. The grape here is Pinot Beurot, an old local cousin of Pinot Gris, planted on limestone-rich slopes that give real tension and depth. Fermented with wild yeasts and aged in barrel, it offers notes of white peach, pear, honeyed spice and a subtle smoky edge, all carried by a lovely saline finish. Pour it with roast poultry, soft cheeses or simply on its own.

L'Ancestrale

From Marsannay, in the north of the Côte de Nuits, this red comes from Sylvain Pataille, a trained oenologist turned biodynamic grower with a real gift for coaxing character out of overlooked plots. The fruit is drawn from old vines, including a share of forgotten local grapes planted alongside Pinot Noir, hand-harvested and fermented with native yeasts in whole bunches. Ageing in used barrels keeps the oak discreet, letting bright red berries, crunchy acidity and a gentle earthy edge shine. Pour it slightly cool with charcuterie, roast chicken or a mushroom risotto, and you'll see why collectors chase every bottle.
