He took over the family vines in Avize, in the heart of the Côte des Blancs, and decided to do things his own way: small batches, hands in the soil, and absolutely no shortcuts.

Avize is Grand Cru territory, and that's no small thing. The chalk beneath these slopes is what gives the wines their electric freshness and that lovely saline finish you'll notice on the last sip. Etienne also works parcels in Bisseuil and Grauves, which brings a little extra roundness to the blends. Every plot is treated separately, because he genuinely believes each corner of vineyard has something different to say.

Chardonnay is the star here — expect plenty of Blanc de Blancs with citrus zest, white flowers and a chalky backbone. But don't overlook the cuvées where Pinot Noir and Pinot Meunier step in: they add depth, red fruit and a warmer, rounder texture. Old vines, low yields, gentle pressing — it all shows up in the bottle.
