The 2014 vintage was fermented in oak, aged patiently on lees, and bottled with barely any dosage, so you get purity rather than sugar. Expect wild strawberry, blood orange and a savoury, chalky finish that keeps you coming back. Perfect with salmon, duck or simply poured slowly on a special evening. Maceration: Short skin maceration of whole Pinot Noir berries, around 24 to 48 hours, with light bleeding of the juice to obtain colour and structure

Colour: Bright salmon pink with coppery highlights, fine and persistent bubbles forming a delicate mousse

Bouquet: Wild strawberry, raspberry, blood orange, rose petal, with hints of spice, brioche and a chalky, smoky touch

Palate: Vinous and tightly woven attack, red berry fruit supported by saline minerality, creamy texture, fine tension and a long, dry, chalky finish

Alcohol content: 12% vol.

Soils: Clay and limestone over chalk subsoil, south-facing slopes of the Les Rachais single vineyard

Farming: Certified organic and biodynamic, manual work in the vineyard, no herbicides or synthetic treatments
