Meunier takes the lead here, grown on chalky, clay-rich slopes that give the wine its gentle roundness and quiet depth. Fermentation happens with indigenous yeasts, part in oak, and dosage stays low so the fruit and the soil do the talking. Expect ripe orchard fruit, warm brioche, a chalky finish and fine, creamy bubbles. Lovely with roast chicken, soft cheeses, or simply poured on its own.

Type of vinification: Whole-bunch pressing, gentle settling, alcoholic fermentation with indigenous yeasts, part in stainless steel tanks and part in oak barrels and foudres, malolactic fermentation carried out depending on the vintage, ageing on fine lees before bottling, second fermentation in bottle and maturation on laths in the cellar for around 24 to 36 months, low dosage in the extra-brut to brut range (approximately 3 to 6 g/l)

Maceration: None, direct pressing of whole bunches with no skin contact

Colour: Bright pale gold with light golden highlights, fine and persistent bubbles forming a delicate mousse

Bouquet: Ripe white fruit, pear and yellow peach, notes of citrus zest, white flowers, a hint of brioche, hazelnut and fresh pastry brought by the ageing on lees, subtle chalky touch

Palate: Fresh and precise attack, creamy texture, mid-palate combining orchard fruit, gentle spice and a faint toasted note, saline and chalky finish of good length, dosage kept discreet to preserve the purity of the fruit

Alcohol content: 12.5% vol.

Soils: Chalk and limestone subsoil with clay-limestone and sandy topsoils, hillside plots of Chamery on the northern slope of the Montagne de Reims

Farming: Sustainable and environmentally respectful viticulture, work of the soils, grassing between rows, no insecticide, hand harvesting into small crates

Ageing potential: 5 to 10 years from purchase, kept lying down in a cool, dark cellar

Food pairing: Excellent as an aperitif, with oysters and shellfish, fish tartare, sushi, roast poultry, veal in cream sauce, soft-ripened cheeses such as Brie de Meaux or Chaource, and fruit-based desserts that are not too sweet
