Grown in the heart of the Montagne de Reims, this cuvée comes from a small family estate in Chamery where Thomas Perseval works his vines with real care, favouring gentle, low-intervention methods. The fruit is picked by hand from a single plot, then pressed and fermented slowly to keep every nuance of the chalky, clay-rich soil. Ageing on lees gives you a fine, persistent mousse and a lovely creamy texture, while the palate stays bright and mineral with notes of white peach, citrus zest and toasted brioche. A characterful grower Champagne to open with seafood, poultry or simply on its own.

Maceration: None, direct pressing of whole clusters with no skin contact

Colour: Bright golden yellow with amber glints, fine and persistent bead

Bouquet: Ripe yellow pear, mirabelle plum, blood orange zest, brioche and toasted hazelnut, with a chalky, smoky note

Palate: Round and generous attack, silky mousse, flesh of orchard fruit and quince backed by a saline, mineral spine and a long, dry, gently spicy finish

Alcohol content: 12.5% vol.

Soils: Chalk subsoil topped with clay, sand and silt on the slopes of Chamery

Farming: Sustainable and organically minded viticulture, ploughed soils, no herbicides, grass cover between rows, manual harvest
