Champagne Les Rachais Brut Nature Champagne Francis Boulard et Fille

Picture a single plot of old Chardonnay vines growing on chalky slopes in the Massif de Saint-Thierry, farmed biodynamically by a family that knows every row by heart. You'll find no dosage here, just pure fruit expression: ripe orchard pear, lemon zest, white flowers and a chalky, saline finish that keeps you coming back to the glass. Aged patiently on lees, it gains toasted brioche depth while staying wonderfully tense and fresh. The 2016 vintage brings real precision and length. Serve it with oysters, grilled fish or simply on its own — it's the kind of bottle that makes any evening feel special.
