Bourgogne Aligoté

Pierre Boisson
Crafted in Meursault by a grower with a cult following, this white Burgundy shows just how brilliant the aligoté grape can be when it's taken seriously. Old vines rooted in limestone-rich soils give real depth, while gentle pressing and ageing in barrel add a creamy, nutty edge to the naturally bright acidity. Expect green apple, lemon zest, white flowers and a saline, chalky finish that keeps you coming back for another sip. Lovely with oysters, goat's cheese or simply on its own as an aperitif. Drinking beautifully now, with enough structure to reward a few years in the cellar.
