🍷 Bastian Wolber: The Energy of Living Wines in Burgundy

Originally from Germany, Bastian Wolber is a former sommelier turned winemaker, now based in Burgundy after a rich journey through Mosel, Alsace, Jura, and Piedmont. Inspired by icons like Jean-François Ganevat and Jean-Yves Bizot, he launched his own project under the name Laisse Tomber, a nod to his intuitive and unpretentious approach to wine.

🌿 Philosophy

  • Organic farming with uncertified biodynamic practices.

  • Natural winemaking: native yeasts, no filtration, minimal or no sulfur.

  • Artisan work on small plots in Pommard, Volnay, Côte de Nuits, and Hautes-Côtes de Beaune.
