Grapes: Blend of macerated raspberries and sour cherries on young and old lambic

Region: Pajottenland and Zenne Valley, Belgium

Appellation: Traditional Lambic

Type of vinification: Spontaneous fermentation, blending of one, two and three-year-old lambics with fresh fruit maceration

Maceration: Several months on whole raspberries and sour cherries before blending

Colour: Deep ruby red with purple reflections

Bouquet: Intense aromas of ripe raspberries, tart cherries, subtle oak notes and a touch of funk from wild yeasts

Taste: Fresh and vibrant acidity, rich red fruit character, balanced by earthy undertones and a dry finish

Alcohol content: Around 6% vol.

Soils: Sandy-loam with clay layers typical of the Senne Valley

Agriculture: Traditional methods using natural fermentation without additives

Aging potential: 5 to 10 years in optimal cellar conditions
