Savagnin sous voile (Non Ouillé)

Fumey-Chatelain
Tucked into the heart of the Jura at Montigny-lès-Arsures, the Fumey-Chatelain family tends old vines on grey marl soils, farming with care and patience. Here the grapes are picked by hand, pressed gently, then left to rest in old oak barrels for over six years without topping up. Under its veil of yeast, the wine takes on that unmistakable Jura character: walnut, curry spice, dried apple and a long, saline finish. Pour it with a mature Comté, a free-range chicken in cream sauce, or simply on its own to let it talk. A true taste of the mountains, bottled.
