A Jura red born of Trousseau from one of the region's most inspired biodynamic estates. Bénédicte and Stéphane Tissot farm their vines with real care, working marl and limestone soils around Arbois to coax out purity rather than power. Expect a bright, perfumed glass: wild strawberry, redcurrant, a twist of pepper and that savoury, earthy edge the Jura does so well. Fermentation happens with native yeasts, with minimal intervention and gentle handling, so the fruit speaks for itself. Serve it slightly chilled with charcuterie, roast chicken or a Comté-topped board. If you love lively, honest reds, you'll want a bottle.
