Riesling Roche Calcaire BIO

Domaine Zind-Humbrecht
Born on limestone soils around Turckheim, this dry Alsatian white comes from one of the region's most respected biodynamic estates, run by the Humbrecht family for generations. The chalky subsoil gives the wine its backbone: taut, saline and wonderfully precise, with aromas of lemon zest, white flowers and crushed stone. Hand-harvested grapes are gently pressed and fermented slowly with indigenous yeasts in large old foudres, then left on fine lees to build texture without masking the terroir. Pour it with oysters, trout or a creamy goat's cheese, and you'll see why it's such a favourite. Drinking beautifully now, or cellar it a few years.
