Extra Brut Blanc de Blancs Le Cotet

Champagne Jacques Lassaigne
# Extra Brut Blanc de Blancs Le Cotet This is Chardonnay from a single Montgueux slope, where chalky soils give the grapes a brightness you can taste straight away. Emmanuel Lassaigne farms these old vines with real care, picking late for ripeness and working with minimal intervention in the cellar. Fermentation happens naturally, mostly in barrel, and there's barely any dosage — so what you get is pure fruit and chalk, nothing hidden. Expect white peach, citrus zest, a touch of toasted almond and a long, saline finish. Fine bubbles, serious depth. Lovely with oysters, roast chicken or simply on its own. A grower Champagne worth knowing.
