🍷 Thomas Pico – Domaine Pattes Loup: Natural Chablis Rooted in Precision, Purity, and Kimmeridgian Terroir
Based in Courgis, in the Chablis region of Burgundy, Thomas Pico represents a new wave of committed, rigorous winemakers. A third-generation vigneron, he founded Domaine Pattes Loup in 2004 by reclaiming his family’s vines at Bois d’Yver. From the start, he converted 8 hectares to certified organic farming (since 2009), still rare in Chablis. He uses native yeasts, avoids filtration, adds minimal sulfur, and practices long aging in tanks or barrels. His Chablis Villages and Premier Crus (Beauregard, Côte de Jouan, Butteaux…) are pure, luminous, mineral, and deep — far from technical clichés.
