🍾 Thibault Tassin: Organic Champagne from Côte des Bar Blending Family Heritage and Modern Commitment
Located in Landreville, Aube (Champagne region), Thibault Tassin represents the eighth generation of the Tassin winemaking family. Since 2015, together with his wife Alizée, he has revived the family estate in Celles-sur-Ource and created his own domain after acquiring a historic farm. In 2021, he began converting 1.25 hectares to organic farming, with the first certified harvest expected in 2024. The estate cultivates Pinot Noir and Chardonnay, typical of the Côte des Bar. His champagnes are artisanal, precise, and expressive — including the Les Fiols cuvée, a Brut Nature Blanc de Noirs.
