🍷 Shun Minowa: Natural Wine from Val Trebbia Blending Biodiversity, Humility, and Japanese Poetics
Based in Travo, in the Trebbia Valley (Emilia-Romagna, Italy), Shun Minowa is a Japanese winemaker with a biology degree from Tokyo. After traveling through Spain, Chile, and France, he settled in 2017 in this wild, hilly region once called “the most beautiful valley in the world” by Hemingway. He farms about 3 hectares organically and biodynamically, with deep attention to soil biodiversity, microbiomes, and native species. Winemaking is fully natural, with no additives or sulfites, often in amphorae or neutral vessels. He works with local grapes (Ortrugo, Barbera, Malvasia…) to produce delicate, vibrant, sincere wines with low alcohol.
