Savigny-lès-Beaune Petit Aigle

Domaine Boris Champy
Picture a Burgundy red that's all about finesse rather than muscle. Boris Champy farms his vines organically on the slopes above Savigny-lès-Beaune, working limestone-rich soils by hand and letting the Pinot Noir ripen gently through the warm 2019 season. Fermentation happens with native yeasts, with a light touch on extraction, before quiet ageing in seasoned oak that adds shape without ever stealing the show. The result is bright red cherry and wild strawberry, a whisper of violet, silky tannins and a fresh, stony finish. Lovely with roast chicken, mushroom risotto or a board of soft cheeses. Drinking beautifully now.
