Saumur Rosé Roséphémère

Domaine des Roches Neuves
A fleeting pleasure worth chasing. Thierry Germain's biodynamic estate in Varrains crafts this pale, delicate rosé from Cabernet Franc grown on sandy-clay soils over tuffeau limestone. The grapes are picked early by hand, gently pressed and fermented slowly in tank to keep every bit of freshness alive. You'll find wild strawberry, white peach and a whisper of citrus zest, carried by a saline, chalky finish that keeps you coming back. Serve it well chilled with grilled fish, summer salads or simply on its own in the garden. Drink it young, while it's still singing — that's the whole point.
