Saumur Blanc L"insolite

Domaine des Roches Neuves
Crafted by Thierry Germain, one of the Loire's biodynamic pioneers, this is Chenin Blanc at its purest. The grapes come from old vines rooted in chalky tuffeau soils around Varrains, worked entirely by hand and farmed without chemicals. Fermentation happens naturally with indigenous yeasts, followed by ageing in large oak barrels that add texture without masking the fruit. What you get is a white with real tension: citrus zest, white peach and a flinty, mineral edge that lingers. Drink it with grilled fish, goat's cheese or roast chicken, or simply on its own. A benchmark expression of the appellation.
