Crafted in the heart of the Loire, this is Chenin Blanc at its most precise. Thibaud Boudignon farms his old vines organically on schist and sandy soils around Savennières, working tiny plots by hand with obsessive attention. Fermentation happens naturally in barrel, with long ageing on fine lees to build texture without ever masking the fruit. Expect a nose of white peach, quince and crushed stone, then a palate that's wonderfully taut yet generous, with a saline, mouth-watering finish. It drinks beautifully now with roast chicken or scallops, and will reward a few years in the cellar. A benchmark white from a gifted winemaker.
