Pommard Les Vaumuriens Chantal Lescure

Grown on the high slopes of Pommard, this Pinot Noir comes from a small family domaine farming organically since the early 2000s. The vines sit on stony, well-drained limestone soil, giving wines with real tension and lift rather than heaviness. Grapes are hand-harvested, partially destemmed and fermented with native yeasts, then aged quietly in oak barrels with only a light touch of new wood. The result is deep ruby in the glass, with black cherry, wild raspberry and a hint of warm spice, held together by fine, chalky tannins. Lovely now with roast duck, even better after a few more years.

Vinification method: Hand harvest, sorting on table, full de-stemming, cold pre-fermentation maceration, indigenous yeast fermentation in open stainless steel and wooden vats with gentle pigeage and pump-overs, gravity-fed cellar, ageing 12 to 16 months in French oak barrels with a limited proportion of new wood, bottled unfined and lightly filtered

Maceration: Around 15 to 20 days, including a cold soak of 4 to 6 days at low temperature before fermentation

Colour: Deep ruby red with purple glints and good density

Bouquet: Black cherry, blackcurrant and wild raspberry, with hints of liquorice, violet, sweet spice and a discreet toasted note

Palate: Full and structured, firm but ripe tannins, juicy dark fruit, earthy and mineral undertones, long savoury finish typical of Pommard

Alcohol content: 13% vol.

Soils: Clay-limestone with ferruginous oolite, pebbly scree on the upper slope, excellent natural drainage, east-facing exposure

Farming: Certified organic (Ecocert), biodynamic practices, grassed rows, ploughing, no synthetic herbicides or pesticides

Ageing potential: 8 to 15 years from the vintage

Food pairing: Beef bourguignon, roast duck, venison, lamb shoulder, mushroom risotto, Époisses and aged Comté
