Moreau-Naudet

🍇 Moreau-Naudet — Chablis with soul

If you've ever wondered what Chablis tastes like when someone really cares, this is your answer. Moreau-Naudet is a small, family-run estate based right in the town of Chablis, and the wines here have a reputation that travels far beyond northern Burgundy. Stéphanie Moreau-Naudet has carried the domaine forward since 2016, keeping the low-intervention approach that made these bottles so sought after by people who drink Chablis seriously.

📍 A corner of Burgundy like no other

Chablis sits apart from the rest of Burgundy, roughly halfway between Beaune and Paris, and that distance shows up in the glass. The climate is cool, sometimes brutally so, and the vines have to work. What you get in return is a wine with real tension — bright, mineral, never heavy. The estate farms around 25 hectares spread across village plots, Premier Crus like Montmains, Vaillons and Forêt, and a slice of Grand Cru Valmur.

🪨 Kimmeridgian soil, the secret ingredient

The limestone here is packed with fossilised oyster shells from an ancient sea, and that's not a romantic detail — you can genuinely taste it. Salinity, chalk, a sort of crushed-stone edge that makes your mouth water. Moreau-Naudet works these soils gently, with old vines, low yields and minimal sulphur, so nothing gets in the way of what the terroir wants to say.

🍷 Chardonnay, and only Chardonnay

One grape, many faces. Chardonnay in Chablis has no need for heavy oak or tricks. Here the wines age in a mix of older barrels and tanks, on their lees, slowly. The result is Chablis with texture and depth but no sugary softness — citrus peel, white flowers, hazelnut, and that saline finish that keeps pulling you back for another sip.

🥂 When to open one

Young bottles are brilliant with oysters, goat's cheese or simply grilled fish. Give the Premier Crus and the Valmur five to ten years and they turn richer, nuttier, genuinely impressive. Honestly though, there's no wrong moment — these are wines made for the table, not the display cabinet.

✨ Production is small and bottles move quickly. If you spot one, take it.
