Domaine des Dolomies

🍇 Domaine des Dolomies — Jura wines with real character

If you've never tasted a wine from the Jura, you're in for a treat. Domaine des Dolomies sits in Passenans, right in the heart of this small but mighty region tucked between Burgundy and Switzerland. Céline Gormally took over the family vines and has been working them organically ever since, with a light touch in the cellar and a lot of attention out in the rows. The result? Wines that taste alive, honest and genuinely different from anything else on your shelf.

⛰️ A terroir shaped by ancient seas

The name says it all — dolomite. These soils are packed with marl, limestone and fossil-rich clay laid down millions of years ago, and you can taste it. There's a saline, stony edge running through these bottles that no winemaker can fake. Add in a cool continental climate, steep little slopes and vines that have to work hard, and you get wines with tension, freshness and a long finish. Harvests are done by hand, yields stay low, and the grapes arrive in perfect shape.

🍷 The grapes behind the bottles

Savagnin is the Jura's signature white, and here it gives everything from zesty, mineral-driven cuvées to the famous oxidative styles aged under a veil of yeast. Chardonnay takes on a whole new personality in these soils — think orchard fruit, hazelnut and a chalky backbone. On the red side, Poulsard brings a pale, perfumed, almost rosé-like delicacy, Trousseau adds spice and grip, and Pinot Noir rounds things out with silky red fruit.

🌿 Farmed properly, made simply

Everything is certified organic, with plenty of biodynamic thinking behind the scenes. In the cellar, it's minimal intervention all the way: native yeasts, very little sulphur, no make-up. What you get is the vineyard in a glass.

🧀 What to drink it with

Pour the Savagnin alongside a mature Comté and watch the magic happen. Chardonnay loves chicken in a creamy sauce, while Poulsard is brilliant slightly chilled with charcuterie or roast salmon. Trousseau? Bring on the mushrooms and game.
