# Sparkling Jura, Zero Dosage Made by Bénédicte and Stéphane Tissot, two of the Jura's most respected biodynamic growers, this sparkling white comes from organically farmed vines rooted in the region's marl and limestone soils. The traditional method gives it fine, persistent bubbles and a long ageing on lees that brings depth and a gentle brioche note. With no dosage added, nothing hides the fruit — expect crisp green apple, citrus zest and a chalky, mineral finish that leaves your mouth watering. Bone dry and beautifully precise, it's perfect as an aperitif, with oysters, or alongside a simple goat's cheese salad. Serve well chilled.
