Crémant du Jura Blanc de Noirs Bénédicte & Stéphane Tissot

Made entirely from Pinot Noir and Trousseau grown on the clay-limestone slopes around Arbois, this sparkling Jura is pure energy in a glass. Bénédicte and Stéphane Tissot farm biodynamically, picking by hand and pressing whole bunches gently so the juice stays bright and pale. After a long rest on lees in the cellar, you get fine, persistent bubbles and a lovely creamy texture. Expect red apple, crushed strawberry, brioche and a chalky, mouth-watering finish. Serve it well chilled as an aperitif, with oysters, fried chicken or a plate of Comté — it handles all three with ease. Seriously good value fizz.

Maceration: None, direct and gentle pressing to obtain a white juice from black grapes

Colour: Pale gold with faint pink-copper glints, fine and persistent bubbles forming a steady bead

Bouquet: White peach, wild strawberry, citrus zest, brioche and toasted almond, with a chalky, slightly smoky note

Palate: Creamy mousse, vinous and full-bodied attack, red-fruit and stone-fruit flesh, taut saline finish with real length and drive

Alcohol content: 12% vol

Soils: Grey and blue Liassic marls, limestone scree, clay-limestone slopes of the Arbois area

Farming: Certified organic and biodynamic (Demeter), hand harvesting, indigenous yeasts, minimal sulphur
