Low yields, hand-picked fruit and a gentle, whole-bunch-inspired vinification keep everything fresh: no heavy extraction, no make-up, just pure red cherry, wild strawberry, crushed herbs and a stony, saline finish. Ageing in older barrels adds silkiness without masking the terroir. Pour it slightly cool with roast poultry, mushrooms or a charcuterie board, and you'll see why Jura reds have such a devoted following.

Maceration: Whole-berry and partially destemmed maceration of roughly two to three weeks, with light punching down and pump-overs

Colour: Bright ruby red with crimson highlights, medium intensity

Nose: Fresh red cherry, wild strawberry and raspberry, with notes of violet, rose, light spice and a subtle chalky, smoky touch

Palate: Silky and fine-grained, juicy red fruit, fresh acidity, delicate tannins, saline limestone finish with good length

Alcohol content: 13% vol.

Soils: Grey and blue Lias marl with limestone scree, south-east facing slopes around Montigny-lès-Arsures

Farming: Certified organic and biodynamic (Demeter), ploughing, herbal preparations, no synthetic treatments
