Born in Avize, this cuvée blends three Grand Cru villages — Avize, Aÿ and Ambonnay — hence its name. The De Sousa family works biodynamically, with old vines rooted deep in chalky soils, hand-harvested and treated with real care. You'll find Chardonnay bringing chalky tension and citrus lift, while Pinot Noir adds red-fruit depth and a rounder, warmer middle. Fermentation in oak barrels gives gentle texture without masking the terroir, and the extra brut dosage keeps everything pure and precise. Expect brioche, white peach, hazelnut and a long saline finish. A seriously food-friendly fizz — try it with scallops, roast poultry or aged cheese.

Palate: Full and creamy attack, silky mousse, flavours of orchard fruit, candied lemon and hazelnut, saline mineral core, long dry chalky finish

Soils: Deep Belemnite chalk under thin clay-limestone topsoil on the Grand Cru slopes of Avize, Aÿ and Ambonnay
