Picture a Jura red that's all about pure fruit and energy. Bénédicte and Stéphane Tissot farm their Arbois vines biodynamically, working marl and limestone soils with real care, and it shows in the glass. Trousseau brings crunchy red berries, a hint of pepper and that lovely earthy, almost wild edge the region does so well. Whole-bunch fermentation and gentle ageing keep everything fresh and silky, with fine tannins and no heavy oak getting in the way. Serve it slightly chilled with charcuterie, roast chicken or a Comté platter. Light on its feet, seriously drinkable, and a brilliant way into Jura reds.

Type of vinification: Hand harvest in small crates, sorting, fermentation with indigenous yeasts in whole bunches or partly destemmed depending on the variety, no added enzymes, ageing in old oak foudres and barrels for around 12 months, minimal sulphur at bottling, unfined and unfiltered

Maceration: Gentle semi-carbonic style maceration of around 10 to 20 days, with light pigeage and infusion-style extraction

Colour: Bright translucent ruby with crimson highlights

Bouquet: Fresh red fruit, wild strawberry, raspberry and cherry, with floral notes of peony, a touch of white pepper and a light smoky, earthy edge

Palate: Supple and juicy attack, silky fine-grained tannins, crunchy red berry fruit, saline mineral core and a lifted, digestible finish of good length

Alcohol content: 12.5% vol.

Soils: Grey and blue Liassic marls with limestone scree, typical of the Arbois hillsides

Farming: Certified organic and biodynamic (Demeter), ploughed soils, herbal preparations, no synthetic treatments
