Volnay Les Pluchots

Pierrick Bouley
Crafted by a young Burgundy grower with a light touch, this red comes from a parcel just below the village, where clay-rich soils give the Pinot Noir real flesh and depth. The vines are worked with care, hand-harvested and largely destemmed, then fermented with native yeasts before a gentle ageing in oak barrels, only a small part new. The result is wonderfully perfumed: wild cherry, raspberry and a hint of violet, with silky tannins and a savoury, mineral finish. Drink it now with roast duck or mushroom risotto, or tuck it away for five to eight years and let it unfold.
