Jean-Marc Pavelot

🍷 Domaine Jean-Marc Pavelot — Savigny-lès-Beaune at its finest

If you've ever wondered what Burgundy tastes like when it's made by a family who genuinely loves their patch of land, this is your answer. Tucked away in the village of Savigny-lès-Beaune, the Pavelot family has been working these slopes for generations, and today Luc Pavelot carries on what his father Jean-Marc built. Nothing flashy, no shortcuts — just honest, beautifully made wine that speaks clearly of where it comes from.

📍 A village that deserves more attention

Savigny-lès-Beaune sits just north of Beaune, cradled between two hillsides with very different personalities. On one side you get warmth and roundness, on the other a cooler, stonier character that gives the wines real backbone. The domaine farms around 12 hectares across some of the village's most respected premier cru climats — Les Guettes, La Dominode, Aux Gravains, Les Narbantons. Each one brings something different to the glass, and that's half the fun of exploring this estate.

🍇 Pinot Noir and Chardonnay, treated with respect

Pinot Noir takes the lead here, and Pavelot's version is wonderfully pure: red cherry, wild strawberry, a twist of spice and that gentle earthy note that makes you want another sip. The tannins are fine rather than firm, so these bottles drink well young but reward a few years in the cellar too. The Chardonnay, grown on limestone-rich soils, gives bright white wines with citrus, white flowers and a lovely saline finish — fresh, precise, never heavy.

🌿 Farming that puts the vineyard first

The estate works organically, with ploughing instead of chemicals, low yields and hand-harvesting. In the cellar the approach is deliberately light-handed: native yeasts, a sensible touch of whole bunches on some cuvées, and oak used as seasoning rather than make-up. The result is wine that tastes alive and genuinely transparent.

🥂 What to pour it with

Reds love roast poultry, duck, mushroom dishes or a good slice of Époisses. Whites are brilliant with river fish, goat's cheese or simply on their own as an aperitif. Whether you're buying your first proper Burgundy or topping up a well-stocked cellar, Jean-Marc Pavelot offers serious quality without the headline prices of the big-name villages. Grab a bottle — you'll understand straight away.
