François de Nicolay

🍷 François de Nicolay — Burgundy with soul

If you love wines that taste like the place they come from, you're going to get on well with François de Nicolay. Based in Savigny-lès-Beaune, right in the heart of the Côte de Beaune, he makes Burgundy the old-fashioned way: patiently, honestly, and with a real respect for the land. No shortcuts, no make-up — just grapes, time and a very good palate.

🌿 A vigneron who works with nature, not against it

François farms organically and biodynamically, which means the vineyards are alive: cover crops between the rows, horses instead of heavy tractors on the fragile plots, and absolutely no synthetic chemicals. In the cellar, he keeps things just as light-handed — wild yeasts, gentle extraction, old barrels so the oak never shouts over the fruit, and minimal sulphur. The result is wine that feels fresh, energetic and wonderfully drinkable.

🍇 The grapes: Pinot Noir, Chardonnay and a few happy surprises

Pinot Noir is the star here, and François coaxes out its silky, red-berry side — think wild strawberry, rose petal and a stony, savoury finish rather than big, heavy tannins. His Chardonnays are taut and mineral, with citrus, white flowers and that chalky Burgundian grip that makes you reach for a second glass. You'll also find the odd gem made from Aligoté or Gamay, bottled with the same care and often offering brilliant value.

⛰️ Terroir you can actually taste

From the limestone slopes of Savigny and Beaune to parcels dotted across the Côte d'Or and beyond, each cuvée tells you something about its soil. François bottles plot by plot so the differences stay clear: one wine floral and delicate, the next darker and more structured. It's Burgundy as a conversation between vine and stone — and he's a very good translator.

🥂 When to open one

The whites are superb with shellfish, goat's cheese or a simple roast chicken. The reds love duck, mushrooms, charcuterie or a cosy evening with friends. Drink them young for the burst of fruit, or give the top cuvées a few years in the cellar — they repay patience handsomely.
