Meet a rare red from the Aube, born on the Largillier slope in Ville-sur-Arce, a single south-facing parcel of Kimmeridgian marl farmed by Jérôme Coessens. Here Pinot Noir reaches a depth you rarely expect from Champagne country. The 2018 vintage was picked as whole bunches, fermented gently and raised without make-up, so you get the fruit exactly as the slope delivered it: wild cherry, crushed raspberry, a twist of pepper and fine, chalky tannins. Pour it with roast poultry, mushrooms or a cheese board, and give it a few minutes in the glass. Small production, real character, genuine pleasure.

Vinification method: Single-parcel still red wine from the Largillier vineyard; hand-harvested whole bunches placed uncrushed in tank, spontaneous fermentation with indigenous yeasts, no added sulphur during fermentation, gentle pressing at the end of maceration, ageing in oak barrels and foudres on fine lees, bottled without fining and with minimal filtration

Maceration: Whole-cluster (vendange entière) semi-carbonic maceration, roughly two to three weeks, with very light punching down and infusion-style extraction

Colour: Bright, luminous ruby red with crimson highlights and a translucent rim

Bouquet: Griotte cherry, wild strawberry and raspberry, floral notes of peony and violet, with hints of white pepper, crushed stone and a subtle smoky, spicy touch

Palate: Silky and juicy attack, finely textured tannins, crunchy red fruit carried by vibrant Kimmeridgian freshness, saline and chalky mid-palate, long mineral finish

Alcohol content: 12.5% vol.

Soils: Kimmeridgian marl and limestone with a high fossil content, south-east facing slope of the Largillier parcel

Farming: Sustainable viticulture moving towards organic practices, no herbicides, soil ploughing, grass cover between rows, low yields, manual harvest in small crates

Ageing potential: 8 to 12 years from the vintage
