Chablis

Billaud-Simon
Born in Chablis, this 2023 white comes from a family domaine founded in 1815 and known for its precise, mineral style. The grapes grow on Kimmeridgian limestone, packed with tiny marine fossils that give the wine its signature flinty edge. Picked at the right moment and pressed gently, the juice ferments in stainless steel to keep every bit of freshness and purity intact — no oak getting in the way. In the glass you'll find bright citrus, green apple and white flowers, with a crisp, saline finish that keeps calling you back. Perfect with oysters, goat's cheese or simply on its own.
