Chablis 1er Cru Mont de Milieu

Billaud-Simon
Picture a slope facing due south-west, warmed all day, where the Kimmeridgian limestone gives this white its signature tension. The domaine, based in Chablis since 1815 and now part of the Faiveley family, farms its vines with real care, hand-picking and pressing whole bunches before a gentle fermentation that keeps the fruit pure and precise. You get white peach, citrus zest and a hint of crushed stone, wrapped in a creamy texture that never hides the salty finish. Serve it with oysters, grilled sea bass or a mature Comté, and you'll see why this 2022 is such a treat.
