Chablis 1er Cru Fourchaume

Billaud-Simon
From one of Chablis' most respected family estates, this 2023 comes off the celebrated Fourchaume slope, where Kimmeridgian limestone packed with ancient marine fossils gives the wine its signature saline snap. The vines face south-west, soaking up enough sun to ripen Chardonnay beautifully while keeping that razor-sharp freshness you want. Fermented and raised mostly in stainless steel, it stays pure and precise, with no oak getting in the way of the fruit. Expect white peach, citrus zest and a flinty, chalky finish that lingers. Pour it with oysters, scallops or a creamy goat's cheese and you'll see exactly why this terroir matters.
