Chablis 1er Cru Vaillons

Billaud-Simon
Picture a glass that smells of white flowers, lemon zest and crushed stone — that's what you get here. The Billaud-Simon family has been working these Chablis slopes for generations, and their touch is wonderfully light: gentle pressing, fermentation mostly in stainless steel to keep the fruit pure and the chalky Kimmeridgian soil doing the talking. The south-east facing vines on this celebrated left-bank slope ripen slowly, giving a 2022 that's generous yet beautifully tense. Try it with oysters, grilled sea bass or a creamy goat's cheese. Drink it now if you can't wait, or tuck it away for five years.
