Côtes de Beaune Pierres Blanches

Emmanuel Giboulot
Meet a Chardonnay grown on the sun-warmed limestone slopes above Beaune, where chalky white stones give the wine its name and its nerve. Emmanuel Giboulot has worked biodynamically for decades, famously standing up for his convictions, and you can taste that care: low yields, hand-picked fruit, wild yeasts and a patient ageing in barrel with minimal sulphur. The result is bright and chiselled, with white peach, citrus zest and a saline, almost flinty finish that keeps you coming back. Pour it with grilled fish, goat's cheese or simply on its own — it's honest, alive and quietly brilliant.
