Côteaux Champenois

Champagne Marie Demets
Here's a still wine from the heart of Champagne, where the grapes usually destined for bubbles are left to speak plainly. Made by a small family house with vines rooted in chalky Champenois soils, it's crafted in tiny quantities — the kind of bottle you won't find on every shelf. Hand-picked fruit, gentle pressing and a patient, low-intervention vinification keep things fresh and honest. Expect bright red berry notes, a fine thread of acidity and that chalky, mineral finish the region does so well. Serve it lightly chilled with charcuterie, roast poultry or a soft cheese board. You'll want a second glass.
