The vines grow on Kimmeridgian limestone and clay, worked with real care and picked by hand, giving fruit that's ripe enough to stand on its own without added sugar. Expect a fine, persistent mousse, bright citrus and crisp orchard fruit, with a chalky, saline finish that makes your mouth water for the next sip. Serve it chilled with oysters, sushi or goat's cheese — or simply on its own as a sharp, honest aperitif.

Maceration: None – direct pressing of the whole bunches, juice separated immediately from the skins

Colour: Bright pale gold with golden highlights, fine and persistent bubbles forming a steady cordon

Bouquet: Citrus zest, white peach and green apple, followed by brioche, hazelnut, white flowers and a chalky, mineral note

Palate: Taut and straight attack, crisp and precise mid-palate, creamy mousse, flavours of orchard fruit, lemon and toasted bread, saline and dry finish of good length
