Grape varieties: Blend of local fruit — apple and pear varieties from old high-stem orchards, co-fermented with grapes from Belgian plots

Appellation: No appellation — Belgian table wine / cider-wine hybrid, sold as fermented fruit beverage

Winemaking: Spontaneous fermentation with indigenous yeasts, no added sulphites, no chaptalisation, no filtration, no fining, aged in old oak foudres and barrels, bottled by gravity

Maceration: Extended contact with skins and, for part of the blend, whole-fruit maceration before pressing; winter-long élevage on fine lees

Colour: Hazy amber to burnished gold, light copper reflections, unfiltered

Bouquet: Baked apple, quince, dried orchard fruit, wild herbs, oak wood, beeswax and a saline, slightly funky wild-ferment note

Palate: Dry and bracing, high natural acidity, tannic grip from skin contact, notes of cider apple, bitter citrus peel, hay and spice, long chalky-saline finish

Alcohol content: Approximately 8% vol.

Soils: Sandy loam over clay, typical Kempen podzolic soils

Farming: Organic and biodynamic-minded, hand-harvested, no synthetic treatments, fruit from old traditional orchards

Ageing potential: 3 to 5 years, best enjoyed within the first 2 years for freshness

Food pairing: Washed-rind and aged cheeses, roast pork, charcuterie, grilled root vegetables, mushroom dishes, Belgian stews
