Vinification type: Spontaneous fermentation with indigenous yeasts, no added sugar, no chaptalisation, no sulphites at bottling, no filtration or fining, ageing in used oak barrels and foeders, blending of several vintages in a perpetual solera-style approach

Maceration: Apple juice macerated on Cabernet skins for several weeks, gentle infusion without pumping over

Colour: Pale ruby to onion-skin pink, slightly hazy, fine and lively bead

Bouquet: Redcurrant, crushed raspberry, fresh apple skin, dried rose petal, a hint of green pepper and wild herbs, subtle lactic and oaky depth

Palate: Dry and taut, bright acidity, light tannic grip from the skins, red fruit and cider-apple tension, saline and slightly bitter finish of good length

Alcohol content: Approximately 6.5% vol.

Soils: Sandy loam and clay-loam soils of the Pajottenland, orchards on limestone-influenced subsoil

Farming: Organic and wild-harvested fruit, untreated old orchards, hand-picking

Ageing potential: 3 to 6 years, best kept upright in a cool cellar
