Vinification / Brewing Method: Spontaneous and mixed fermentation, no pitched commercial yeast, oak barrel maturation, refermentation in bottle, unfiltered and unpasteurised

Maceration: Extended maceration on gentian root and Tarocco blood oranges in barrel prior to bottling

Colour: Hazy amber to deep golden with orange-pink reflections, fine and persistent white foam

Bouquet: Blood orange peel, bitter citrus, gentian root, dried herbs, light oak, subtle lactic and floral tones

Palate: Dry and vinous attack, bright acidity, bitter-herbal backbone from the gentian, juicy blood orange fruit, mineral finish with a long dry bitterness

Alcohol Content: Approximately 6% vol.

Soils: Loamy soils of the Dijle valley, cereals and fruit sourced from local Flemish plots
