A sparkling cider born in France from a small, passionate producer who works with wild orchards and old apple varieties. Picked by hand in autumn, the fruit is pressed gently and left to ferment naturally with its own yeasts, without shortcuts or heavy additions. The result is bright and lively, with fine bubbles, crisp orchard fruit, a touch of honey and a dry, refreshing finish. Lovely chilled as an aperitif, and just as happy alongside pork, cheeses or a galette. Low in alcohol, full of character, and made with real respect for the land. A bottle worth sharing.

Maceration: Short pre-press maceration of the crushed fruit for 12 to 24 hours to extract aromas and tannins, followed by slow pressing and cold settling

Colour: Hazy golden yellow with amber highlights, fine and persistent bubbles

Bouquet: Ripe apple, quince paste, fresh pear, white flowers, a hint of lemon zest and a light bready note

Palate: Dry and lively attack, delicate effervescence, juicy orchard fruit, gentle quince tannins, saline and mouth-watering finish

Alcohol content: Approximately 5% vol.

Soils: Clay-limestone and silty soils planted with traditional high-stem orchards

Farming: Organic practices, hand-harvested fruit, no synthetic treatments

Ageing potential: 2 to 4 years, best enjoyed within 2 years of bottling

Food pairing: Oysters and shellfish, charcuterie, savoury buckwheat galettes, roast pork, raw milk cheeses such as Comté or Camembert, apple tart

Serving temperature: 6 to 8 °C, ideally stood upright and chilled before opening
