Savagnin Sous voile

Bénédicte & Stéphane Tissot
Picture a Jura classic that rewards curiosity. Bénédicte and Stéphane Tissot farm their Arbois vines biodynamically, and you can taste that care here: ripe Savagnin grown on grey marl soils, hand-harvested and left to age quietly under a veil of yeast. That slow, oxidative ageing gives you walnut, curry spice, dried apple and a saline, almost citrusy lift, all wrapped in a texture that feels both lean and generous. Pour it with Comté, roast chicken in cream sauce, or simply on its own to see how it opens up. A brilliant introduction to the region's most distinctive style.
