Vincent Wallard, a Brit who fell for the Loire and never looked back, works his Cabernet Franc vines with real care, letting the region's sandy-clay soils and cool climate do the talking. The 2016 vintage gives you bright red fruit — think raspberry and redcurrant — with that gentle peppery lift Cabernet Franc does so well. Vinification is kept simple and honest, with minimal intervention, so nothing gets in the way of the fruit. Serve it slightly chilled with charcuterie, roast chicken or just good company. Vinification method: Natural winemaking, hand-harvested fruit, spontaneous fermentation with indigenous yeasts in stainless steel and old wooden vats, no fining, no filtration, minimal to zero added sulphites, ageing on fine lees before bottling

Maceration: Semi-carbonic maceration on whole bunches for around 10 to 15 days, with gentle infusion and light punch-downs

Colour: Bright ruby red with purple glints, medium intensity

Bouquet: Fresh raspberry, blackcurrant, violet, crushed red berries with a subtle peppery and graphite note

Palate: Juicy and supple attack, silky tannins, crunchy red fruit, savoury mid-palate and a fresh, mineral finish with gentle grip

Alcohol content: 12.5% vol.

Soils: Clay-limestone with flint and sandy gravel deposits

Farming: Organic practices, no synthetic treatments, ploughed soils, low yields

Ageing potential: 5 to 8 years from the vintage
